Our land

Louvois, presently is known for its great vineyards classified Grand Cru 100 % because only 17 villages in Champagne have reached such a label. Our vineyards are exposed South, South East and the soil is clay and limestone. We operate 9.5 hectares which are located mainly between Louvois, Bouzy and Tauxières Mutry located in the Premier Cru area. Our grapes are 75 % Pinot Noir and 25 % Chardonnay.

The average age of our vines is 35.

The work of the vine

Planting

Our plants are from our most qualitative vines, they are raised in nurseries for one year before being planted in early April.

Pruning

It runs from November to March. There are two prunings : the Chablis and the Cordon de Royat. It is realized according to very specific rules to voluntarily limit the performance of the vine.

Binding

In April, the structures of the vine must be bound to iron wires thanks to a special grip. The vines will hold future grapes.

Disbudding

In May, depending on the vegetation, we suppress unnecessary sprouts in order to favor the fruiting branches

Tying-up

We ascend vegetation thanks to wires located on each side of the vine

Trellising

It is to arrange the strands between the vines and it is to staple them, to maintain adequate ventilation of the vegetation

Clipping

It is done after trellising and several times before harvesting. We suppress young sprouts and leaves in order to have better sunlight for the grapes. This is done manually using a cutter and also using a trimming machine on a straddle-tractor.

Grape processing

Throughout summer, we conduct several pesticide treatments. All our treatments are reasonable. We mainly fight against fungal diseases and various pests.

The harvest

The grapes are hand-cut and then brought to our press.
